Funny with Greg and my sis's bdays, Greg was born a yr before she. I always find it funny when I know ppl who have nearly the exact same bday's and/or age.

My sleep schedule was sooooooo messed up this weekend and I don't know why. Both Sun morning and Mon morning, I woke up around 5:30am. All Sun evening, all I wanted to do was sleep. Sure I told myself I'd only be taking a nap but I slept through half the night. Then was wide awake when watching Home Movies and went to bed shortly after. I just KNEW that I'd be waking up too damn early come the next day.
So I used that time wisely yesterday morning by finishing the baking I didn't do Sun night. The c.chip cookies came out pretty good. And just when I thought I was done baking, bubba said he wanted the cookies like his mom used to make. In fact he was like (after eating a handful of sugar cookies) "these aren't the kind mom made." and then called his sis and see what it was that she made. His version of sugar cookies are the "cookie cutter" cookies that I was told about. My mom never dealt with making them cause she complained about how thin you had to roll out the dough and then hoped that it turned out alright, hence why I never bothered with it. So he's buying me the stuff to make these "cookie cutter" cookies and I can only hope it works out (not that I really want to bake anymore).
While baking yesterday, was able to burn certain discs that ppl requested. I'm hoping I can get Anna's and Liz's stuff burnt before the end of the week so I can send everyone's package and the other half of the cards I didn't send out yet.

When you're ready to roll it out, you can use a double layer of wax paper or plastic wrap if you don't have one of those fancy plastic sheet thingies. I wet my table top to keep the paper positioned on the table. I sprinkle a bit of flour on the wax paper and spread it around with my hand. If the dough seems too soft (if it wants to stick to the paper after you flatten it), you can sprinkle a little flour or confectioner's sugar on it. I like to use plastic wrap on the top because I can see through it better and it's a little easier to lift off than wax paper is. If it doesn't seem right, don't be afraid to scrape the dough up and start again, though if you add flour each time it can change the taste of the cookies which is why it's a good idea to use confectioner's sugar in place of flour. I usually add icing to my cookies so it doesn't matter if the cookie itself loses a bit of sweetness from extra flour.
You'll only be able to cut out about one to two dozen cookies before the dough will start to warm so at that time you should refrigerate the rest for a bit while the others are baking.
Use a flat metal spatula to (slowly and carefully) lift the cut cookie and place it on the tray. I only use insulated baking trays and bake the cookies until they just begin to change color at the edges. I don't wait for them to brown. Once they start to brown they're harder to remove, but the double insulated cooking sheets are a godsend in making the cookies easy to lift and not over-cooking the bottoms.
Let them cool for about 3 to 5 minutes, then again use a flat metal spatula to take the cookie off the pan and cool on a rack. If you try to take them off too soon they'll bend but if you wait too long they want to stick to the tray.

Have emailed you the list of "acquired" music. I have more cds that I've ripped to my compy, and I can always send a list of those.
